Basbousa (بسبوسة) is a delicious semolina cake eaten in the Middle East. It's texture is crumbly yet moist at the same time, sticky with syrup and often topped with a thick Arabic cream called qashta (قشطة) which is called eshta in some countries.
My favourite basbousa is sold gift wrapped in Alexandria, Egypt and the eshta is served in a slab above the actual basbousa. If anybody reading is thinking about visiting the Middle East, my top tip is not to leave this out! The picture does not do it justice!
